Monthly Event Series

Food & Wine Education Series

This series features a culinary partnership between Master Sommelier Patrick Okubo and Makena’s talented chefs. It is designed to pair the best of  our Chef’s fresh and cultured dishes with the best of old world and new world wines. The series will focus on various wines paired with dishes made with fresh local ingredients from local farms and companies. During each event our chef provides a cooking demonstration while Master Sommelier, Patrick Okubo educates on the wines chosen for each event. Each event will introduce a new theme with three wines and dish pairings. Past themes include: Poke & Sauvignon Blanc, Taste of Sonoma,  Taste of Australia, NE Italy and Gnocchi,  Lamb & Syrah, Spanish Wines & Tapas, Taste of Chile, Santa Barbara Wines and Taste of Napa. Event usually priced at $45 per person, plus tax and gratuity.

About Master Sommelier, Patrick Okubo

Patrick “Pat” Okubo is a Master Sommelier with the Court of Master Sommeliers, a Certified Wine Educator (CWE), and Certified Specialist of Spirits (CSS). A graduate of University High and the University of Hawaii, he is a member of the National Guard, runs The Wine GI, a personal wine consultation and education business, and is host of A Perfect Sip – an online radio show, www.aperfectsip.com. Pat is the Fine Wine Specialist and Wine Educator for Young’s Market Hawaii. Previously, he opened Formaggio Grill as Managing Partner and Wine Director / Restaurant manager at Four Seasons Lana’i. Pat is the third Master Sommelier in Hawaii and is the second youngest Master Sommelier in the nation.

 

Winery of the Month Series

Each month the Makena Beach & Golf Resort features a winery or vineyard in its dining outlets, offering three flight tastings and specials on the chosen winery’s wines. In addition, the resort holds a special Winery of the Month dinner, a five course meal designed by the resort’s chefs and paired with wine selections of the featured winery. These monthly wine dinners feature a special guest host from the chosen winery, vineyard or distributor to speak on the wines chosen and the pairings. The Makena Beach & Golf Resort introduced its new Winery of the Month series in January 2013 featuring Cakebread Cellars with special guest Dennis Cakebread. Other wineries featured include Duckhorn, Craggy Range, Banfi Vitners, Miner Valley, Cade, Rombauer, Paradigm, Silver Oak, Joel Gott and Alexander Valley Vineyards to name a few.  Event prices ranges from  at $100 - $150 per person, plus tax and gratuity.

Makena Beach & Golf Resort’s newest event series occurs monthly at the Molokini Bar & Grille and features a different spirit and master mixologist each month. Focusing on bartending techniques that can be utilized at home using various top shelf spirits, each event will feature drink demonstrations by the master mixologist and a representative from the chosen spirit. Guests will get the chance to sample 3-5 cocktails at each event. Specialty appetizer pairings prepared by the resort’s culinary staff will also be provided. Past event themes and spirits include: Casamigos Tequila, Ocean Vodka, Juniper Berries & Everything Gin, Whiskey and Bourbon, Sammy’s Beach Bar Rum.  Past Master Mixologists in attendance includes Chandra Lucariello  and Jeoy Gottesman. Event usually priced $60 per person, plus tax and gratuity.

Wine & Dine 2014 Fundraiser for Soroptimist International of Maui

The Makena Beach & Golf Resort is happy to once again host Soroptimist’s International of Maui’s annual benefit event “Wine & Dine 2014.” The three course dinner event includes a variety of complex, flavorful wines coupled with fine cuisines prepared by Chef De Cuisine Kurt Lesmerises.  It also includes live entertainment and food and wine pairing education by guest sommelier Zoe Benrexi.

Proceeds from the event will benefit Soroptimist International of Maui, a non-profit, 501(c)(3) volunteer organization that works to improve the lives of women and girls, in our local Maui community and throughout the world. Soroptimists help women and girls live their dreams through a variety of awards and programs. Soroptimists also act as advocates for other organizations that are doing the same types of work in the community to help improve the lives of women and children (i.e. Child Welfare Services and Women Helping Women).

Last month the Makena Beach & Golf Resort took you on a Taste of France, this month we bring you an ‘Italian Experience’ as wine educator and advanced sommelier Charles Fredy returns for another food and wine education series event on Saturday September 20, 2014 at 6:30 pm at the Molokini Bar & Grille. Savor three classic wines from the wine making regions of  Sardegna (also known as Sardinia), Piedmont and Veneto Italy while savoring rich Italian dished prepared by Chef De Cuisine Kurt Lesmerises. Don’t forget the event’s signature wine education and food demonstrations, plus live entertainment. Pairings for the event include:

  • 2013 Cherchi, Pigalva, Vermentino De Sardegna, Italy paired with Grilled Fresh Herb Marinated Garlic Butter Shrimp

About Charles Fredy

Wine Educator Charles Fredy takes over the Food & Wine Education series this month, filling in for the event’s customary expert Master Sommelier Patrick Okubo and offering a wine influenced je ne sais quoi all his own. Currently Vice President for Chambers and Chambers wine merchants, Fredy’s early childhood and adult professional career has gravitated towards wine. Family legend has it that his father’s family had one once owned a vineyard in France, but immigrated to America due to the hardships brought by WWII. Fredy’s father had great success in the restaurant business. He owned his own New York restaurant and exposed Fredy to the inner workings of the business at a young age and thus the importance of wine and food. Fredy’s first sales position was as a wine specialist with a local distributor. In 1982, Fredy’s father, then KoBrands VP of National Accounts, sent Fredy to France to learn about the life of wine. He return to the states in 1983 with a fond appreciation for the wine making process, and worked for Mosswood Wine Company, again selling wines. After a small stint as a licensed stock broker, Fredy went back to the restaurant business, as a waiter and then sommelier. His first sommelier position was in Hawaii, at the Westin Maui. It was there that he realized his passions for wine and consequently how much more he needed to learn about it. He worked briefly in Palm Beach and Pheonix as a sommelier before returning to Hawaii, working with Chambers and Chambers and Better Brands. Fredy has earned is Advanced Sommelier Certification from the Court of Master Sommeliers and is a Certified Wine Educator.
