Head over to Molokini Bar & Grille for an invigorating fresh look at island flavors under the direction of Executive Chef Marc McDowell. Every dish is prepared with fresh ingredients from the land and seas surrounding the islands of Hawaii, with most of the vegetables and herbs coming right from the resort’s own on-site garden. Everything on the menu from the bread and sauces are made in-house from the restaurant kitchen to assure the finest quality.
Serving up traditional Hawaiian Regional Cuisine, this kitchen is known for fresh takes on such favorites as the Cilantro and Macadamia nut crusted Mahi Mahi. A seasoned and seared mahi topped with a crust made of cilantro stems and macadamia nuts infused with ginger, garlic, jalapenos, lime juice and seed oil; served over a citrus red quinoa and a medley of seasonal baby vegetables from the resort garden sautéed in a lemongrass beurre blanc.
In the mood for something of the Western comfort variety? Try the South Maui BBQ Ribs, a rack of ribs braised in a southern style broth infused with smoky chipotle peppers, then given a mouthwatering dry rub before being grilled over an open flame.
And if your taste buds aren’t intrigued enough, the ribs are then basted with Makena’s own southern style BBQ sauce, served with Kula grown corn on the cob, blue cornbread infused with fresh jalapenos and a side of barracho beans.
If you are looking for something on the lighter side try the Molokai Potato Fried Lobster Salad, a favorite among seafood lovers and salad fans alike, the salad is prepared with fresh hydroponic greens, blueberries, Edamame, Avocado, Baby Tomatoes, Maui Onion, Baby Mache drizzled with Big Island Vanilla Citrus Vinaigrette, then topped with deep fried succulent half lobster tail wrapped up with Molokai Sweet Potato Curl.
Live music makes this a great place for drinks and small plates at the bar, or leisurely family dinners in the dining room. Chef McDowell recommends the ahi carpaccio as a starter, served with chunky ginger avocado, Kaffir lime parfait, and a South Pacific splash best paired with a selection from our excellent wine and exotic cocktail menus.
